I'm Chef Vital. I started cooking professionally over two decades ago and never looked back. I came up through Hyatt kitchens, ran teams, ran catering operations, and learned how to feed a lot of people exceptionally well — without losing the soul of the food.

Chef Vital Kitchen is what I've always wanted to do: cook for real people, every week, the way I'd cook for my own family. TexMex from the heart, slow-smoked BBQ from the bones, and clean, honest ingredients from start to finish.
